Aloha! Most of the Coffee grown in Kaʻu is in a climatic band from 1,000′ to approximately 2,500′ above sea level. Immature cherries are left on the trees for future harvesting. This type of harvesting requires multiple harvests and is very labor intensive. Read more Operations are Powered with Pure Hydro Energy Mature coffee cherries can manifest themselves in red, yellow and orange pigmentation. After being harvested, cherry is transported to washing stations where it is first weighed and then loaded into a depulping machine. Read more Processing The parchment, with its layer of mucilage remaining, is taken directly to dry in the sun (skipping the fermentation tank and washing stage that occurs at this point in washed process coffee). Read more Natural production cycle The natural process is the original manner in which coffee was processed. The cherries are dried with the beans inside, like drying a grape into a raisin. The beans are dried with all of their layers intact, including the coffee cherry and mucilage. Naturally processed coffees typically have heavier mouthfeel, lower acidity levels and intense, exotic flavor profiles. State of art equipment Drying is an extremely delicate process that must be attended to constantly. The beans must be rotated, usually by raking, to ensure that they dry evenly to avoid fermentation and rot. During the drying stage the remaining mucilage dries into the core of the bean changing the final flavor profile. Hydro-Energy Plant In recent years, the crew of Ka’ū Coffee Mill renovated several USGS ash bed tunnels in the area. Carved through solid rock and layers of volcanic ash, these tunnels meander underground for lengths of 2,000 feet and more. Descending from elevations as high as 3,500 feet and including a 13-million gallon black-sand and native-stone reservoir, Keaīwa, this system is now being restored to provide water to the farm lands and farmers of Ka’ū, serve the Mill, and double as a hydroelectric resource. Long term vision Once the system is fully operational, Ka’ū Coffee Mill may be the first coffee mill in the Nation to be fully green-powered. Any extra energy to be generated through the hydroelectric plant will be sold to the island’s utility grid. Peaberry Coffee is made from a naturally occurring coffee bean mutation. While a regular coffee cherry contains two coffee beans, occasionally only one will develop and grow. This results in a single, round coffee bean – a peaberry! However, this mutation only accounts for about 5% of the coffee beans in a harvest. This is why it is such a prized bean.
Because of how it develops and roasts, peaberry coffee noticeably differs in flavor from regular coffee beans. Most notably, it will be a lot more complex in the upper range of flavors and aromatics , as well as a more syrupy mouth feel. Important factor in flavor is the processing method. This peaberry is made with washed coffee, which means the coffee was cleaned completely from all pulp and mucilage before drying. The result is a clean, classic coffee flavor – the perfect cup for any occasion

Kaʻu Coffee Mill is Hawaiian full-service coffee plantation located in the district of Kaʻu on the Island of Hawaii. Our beans are stored green and small batch fresh roasted daily. The Hawaiian climate of the region provides sunny hot mornings, then a characteristic cloud filled afternoon with light rains. Then at night the cold mountain air flows off of Mauna Loa towards the coast cooling the region and allowing the coffee plants to store energy and sugars within the ripening beans.
Very good coffee, love peaberry, great for sipping, a little bit pricey thoughI tried this brand rather than my preferred peaberry from a different brand. Disappointed by the taste, freshness, and the cost of the item. It’s my fault I didn’t see that this is only 8oz - so I was surprised by the size of the package vs. the cost. Still - I opened the bag and the smell wasn’t fresh nor enticing. The taste when brewed is acidic and bitter. Not enjoyable when brewed sadly. Will be going back to my former brand.excellent fresh flavor and not oily. I visited the plantation when I was on vacation at the island of Hawaii. Worth the price.If you want old coffee buy this for $38..small old grey bens, smelled odd, would return if could. Will use for fertilizer.On our honeymoon a few years ago, my wife and I visited the plantation that grows this coffee. It was great to see they carry it on Amazon. I ordered toward the end of September and the coffee arrived within a couple of days. The day it was roasted was about 3 weeks before it arrived in our hands. It tasted plenty fresh to us, just as good as we remembered.So I bought this while visiting Hamakua MacNut since they were featuring Kau's Peaberry Medium Roast whole beans. I used a burr grinder to coarse grind the whole beans then used a french press to extract the coffee. The coffee was very light, mild, almost too watery with a somewhat unpleasant sour after taste. I've tried peaberry beans from few other roasters while I was staying at Hualalai while dining at Ulu restaurant and those were great. I think they were using beans from Paradise Coffee. This Kau brand just didn't come close to the top tier beans / roasters when it comes to Kona Coffee. If the beans I tried at Hualalai was 10/10, this was about 3/10.The coffee had no smell to it what’s so ever! That was my first clue! After grinding and brewing it was not good, no flavor! It’s like it’s been sitting in a warehouse for yearsThis in my opinion is the best coffee in the world.
